Chocolate Marquise on Meringue

This month was my first month participating in the Daring Bakers challenge. This fun group chooses one blogger to host a monthly challenge. That blogger picks a dessert, announces it, then everyone else makes it and adds their own variations. I like it because it inspires me to be more creative and to try making things I would have never thought to make.



The May 2011 Daring Bakers’ challenge was hosted by Emma of CookCraftGrow and Jenny of Purple House Dirt. They chose to challenge everyone to make a Chocolate Marquise. The inspiration for this recipe comes from a dessert they prepared at a restaurant in Seattle.

A marquise is basically a frozen mousse rolled in cocoa. They also suggested adding a torched meringue and a tequila caramel drizzle. I decided to try the vegan version of the dessert offered. I've been cooking more vegan recently, and honestly, the vegan version looked easier. :-) Ashlae at ladycakes provided the vegan recipes.

I followed her recipes, found here, but added some tequila to the caramel, and cayenne and orange zest to the chocolate.



I loved all of the components that I made (coconut caramel, frozen chocolate pudding, and vegan meringue), but together it was too rich for me. Others who are more into desserts would love it, I'm sure.

I apologize for the awful pictures.  I broke my camera so I had to use the cell phone camera.  It did give me a great excuse to order a new camera.  :-).   It should be here soon, then I'll post lots more recipes!

Hi Karla. I think anything like meringue, jelly donut and beer would capture our attention more than the quality of any camera, but the pics look fine regardless. I look forward to seeing more recipes and pictures in the posts to come, especially from a fellow foodie who is working hard towards vegan goals. I think beer bread is a good start!

Thanks for your kind words! I always feel a little silly trying to take a nice shot with my iPhone camera. :) And I agree, it's nice hearing from others who also trying to change lifestyles.

Congrats on your first challenge, and welcome to the Daring Bakers! I was tempted to try the vegan version and it looks like it came out really well. It sounds like it's possibly more dense than the original version which is more fluffy, so maybe you'd like that better. Also, there's no shame in posting iphone photos every now and then! Do you have the free Instagram app? I love using it on my iphone shots!

Thanks Karen! Yep, I was upset that my camera was broken, then I realized it had been a really great camera for 10 years AND I had a perfect excuse to get a newer model. Then I wasn't upset any longer. :-D

How incredible! I've been wanting to make a chocolate marquise for the longest time, and now I don't even have to veganize the recipe. Nearly instant dessert gratification! :)

Hannah-- Yes! Ashlae did an awesome job of veganizing the marquise. It was easy and my favorite component of the dessert. It was surprisingly healthy for how rich it tasted!

Hi Karla. I tried this last night. It came out pretty good (my friend really loved it), but I couldn't get away from the tofu flavor. I could still taste it even with the choc and chile. I drained it well, but didn't rinse it or anything before I added it...did you? I also used regular choc chips but I doubt that would have made a difference. Any suggestions? Surprisingly good though!

Hey Jodie,
So I actually found the opposite to be true..it was too rich for me. And I really hate tofu! But from what other people have said about vegan pudding the type and even brand of tofu you use can make a HUGE difference. I used the one they suggested on the site (Morinu) it is unrefrigerated and not stored in water. That may be the problem, OR you might just have sensitive taste buds? :-D
